Everyday Life – Paleo Coffee Cake
I woke up this morning to a recipe in my news feed that I had to try. I look at recipes all the time, but I usually don’t have all the ingredients, so it goes uncooked, unbaked, uneaten.
This morning was no different. I had no maple syrup. I did have honey, and I figured these would work just as well with that sweetener. So I gave it a go.
Here’s the recipe I used, and below the picture, I will post my modifications. My kids have eaten nearly half the pan.
It’s a small pan. They are teens. What can I say.
I had one slice, with a half a cup of coffee/splash of organic cream. Utterly satisfying.
I’m not a baker. Don’t like baking at.all. But these will be made again. SO GOOD!!!
My mods –
In place of maple syrup, I used 1/3 cup of raw honey.
I only used 1/2 cup of chocolate chips mixed in the batter. Not because I’m healthy… I didn’t want to use up all the chips. I’m cheap. That’s what it is.
I did not use shredded coconut, because my kids don’t like the texture.
