Migraine finally gone. I was craving savory brunch, but not willing to dirty a pan for some scrambled eggs. Besides, I have to be in the mood for eggs. Anyone else?
I have had a Vitamix blender for 4 years. I had heard rumors that it can make soup, but I hadn’t tried it until recently. My friend showed me how the other week, and I have been a crazy soup making lady. I am amazed that, after 5 minutes on high, a little water, tomatoes, carrots, celery, onion, garlic and seasoning turns into this creamy, bisque-like soup base. It can be eaten as is, or some extra veggies, and whatever protein can be pulsed/chopped in.
I made the base this morning, then added some leftover roast chicken, a dab of grass fed butter, and a splash of chipotle hot sauce. My teen had 2 bowls full.
This is a good thing. I like good things. 🙂
